2 cups bean sprouts
1 cup shredded carrots (shredded the long way)
1/2 cup shredded green onion (shredded the long way)
1 tbsp shredded dried chili (optional)
1 tbsp grated garlic
1 1/2 tbsp oil, heated
1 tsp Chinese black vinegar
2 tsp oyster sauce
1 tbsp home made Szichuan sweet soy sauce (See separate recipe)
1. Blanche the bean sprouts by putting them in a pot of boiling water for 15 seconds. Remove the sprouts, and spread them out on a plate to cool.
2. Mix in the shredded carrots and onions, garlic, and optional shredded chili.
3. Pour the hot oil onto the salad. Add black vinegar, oyster sauce, and Szichuan sweet soy sauce.
4. Mix the salad well and serve.
