Beef Jerky, Regular (My Favorite)

Ingredients

3-1/2 lbs lean round bottom roast

Marinade:

2 tsp salt

1 tsp onion powder

1/2 tsp garlic Powder

1 tsp chili powder

1 tsp pepper

1/2 tsp cayenne

3 dashes liquid smoke

1/2 cup hot water

Directions

1. Combine the salt into the hot water, add the rest of the marinade ingredients and let it sit until it has cooled.

2. Remove all fat and silver skin from the roast. This should leave about 3 lbs of beef remaining. Slice the beef into 3/16 inch thick slices, then cut the slices into 3/4" to 1" strips.

3. Pour marinade over the meat and mix thoroughly. Let marinate at least 1 hour.

4. Dehydrate at 135 degrees for 11 hours.

5. This one is very good.

6. This yields about six 70 gram (15 piece) servings

7. 5 1/2 lbs of fresh meat yields 4 lbs of jerky

8. 3 pounds of lean beef, sliced 3/16" thick, fill the 6 trays of my dehydrator. (that's 10 oz per tray)
